A beer with a 30-month production process, inspired by Flemish red ale. Acidified at the mixed fermentation stage, then secondary fermented in barrels by wild yeasts from the Beersel area in Belgium. Its flavour profile is the result of a rich composition of malts and the work of many micro-organisms. Intensely vinous, fruity and sour, with a subtle counterpoint of sweetness. A dry finish, with notes of wood and a horse blanket.
The barrel: Sourced from the French vineyard Château Kirwan (AOC Margaux), used for 3 vintages of wine with a predominantly Cabernet Sauvignon varietal.
Water, barley malt: Pilsner, Munich, caramel, roasted; sugar, corn flakes, caramel wheat malt, Sybilla hops, yeast: The Yeast Bay Beersel Brettanomyces Blend, Safale US-05; bacteria: Lactobacillusplantarum, Lactococcuslactis, Leuconostocmesenteroides.
